Great to hear you did your first upwind 360's!!! super cool!! It's the base for a huge amount of moves!!!
Yeah once you manage to lean forward enough in the footstraps - and with enough wind - it is definitely easier doing the upwind360 in the footstraps...
To avoid getting pulled over when the clew passes through the wind, bend your mast arm more and more in the backwinded position... and when the clew turns through the wind, wait a bit more until the board has rotated enough. If you open the clew later and start with a bent sail arm, you have more way to open the sail and release pressure...
Tip:

- to get the nose through the wind always:
When doing it in the footstraps from planing, you just have to carve more!
Usually you can carve aggressively into the wind, lean your body forward and the sail back, until the nose is already almost through the wind.. then hang on the boom and lean the sail forward... by pressure on the mast foot, the board will rotate to the back-winded position...
